A festive winter warmer for you from Alice Ramcharran
Well it went as quickly as it came – and Christmas is over for another year! However if you are still feeling in the festive mood, and still wanting to eat that festive cheer but want to start getting back in to a regime of eating healthier again after all that stodge over the past few days, then here’s a little winter warmer for you to try. The recipe uses venison, but could use any meat or leftovers that you have, so have a play about, and enjoy – and let me know how you get on!
Venison stew
Warming winter comfort food – and healthy!
Serves 4
1 tablespoon olive oil
1 medium red onion, diced
1 medium white onion, diced
500g diced venison
½ tsp sea salt
Freshly ground black pepper
½ tsp mixed herbs
3 cloves garlic, crushed
1 pint homemade meat stock
3 large carrots, peeled and diced
1 cup frozen peas
1. Put the oil and onions in a saucepan and fry over a gentle heat, stirring occasionally.
2. In a large bowl, mix together the salt, pepper and herbs, then add the venison and stir thoroughly to coat the meat.
3. Add the venison to the pan with the onions, along with the garlic. Increase heat to medium and fry, stirring until all the meat has changed colour.
4 Add the stock and stir thoroughly, then bring to the boil and reduce heat to simmer for 30 minutes.
5. Add the carrots and peas and simmer for a further 15 minutes.
6. Remove from the heat and serve piping hot with sweet potato mash and steamed green beans.
